Hainanese chicken rice isn’t just popular in China, Singapore and Malaysia. We in Vietnam love it, too. My first encounter with it wasn't the best, but I soon fell in love when I tried it at the right place.
450 g normal rice rinsed a few times and soaked in water for at least 1 hour.
50 g sticky rice rinsed a few times and soaked in water for at least 1 hour.
1.5 kg chicken whole
3 slices ginger
1 tsp salt
1 tsp chicken stock.
3 minced garlic, shallot and ginger
** Orange sauce**
10 g garlic
20 g ginger
2 large chilli
2 bird-eye chilis
juice of 3 kumquats
2/3 tsp salt
1 tbsp sugar
1 tbsp vinegar
1 tsp seasame oil
2 tbsp soy sauce
2 tsp sugar
1 cucumber Peeled, cut into thick slices on the diagonal
